Ingredients for 4 persons:
350 grams of Spelt Pennette pasta
50 gr of Roboqubed orange mustard
100 gr of Stracciatella di burrata (fresh cheese)
50 gr of Arugula
40 grams of shelled walnuts
80 grams of extra virgin olive oil
Salt and Pepper to taste
Prepare the arugula and chopped walnuts in a bowl, add oil and Roboqubed orange mustard.
Cook the penne pasta in salted water, drain it “al dente” (not overdone), cool it under running water and add it to the other ingredients. Stir to mix and let the pasta gain the flavor well. Add the stracciatella. Season with salt and pepper and serve.
